We've added some great minced meat ideas to get you started. You will be amazed how versatile your meat mincer can be. You could try your hand at chilli burgers, apple and pork sausages, lamb kofte kebabs, Italian meatballs. You're only limited by your imagination.
Burger Ingredients: 1kg beef mince, 1 dried red chilli, 1/2 a red onion, peeled and finely chopped, a sprig of fresh tarragon leaves picked and chopped, 1 large free-range or organic egg, a handful of breadcrumbs, 1 teaspoon Dijon mustard, 2 tablespoons freshly grated Parmesan, a good pinch of ground nutmeg, oil for frying, salt and freshly ground black pepper
Salad Ingredients: 1 cos lettuce, 4 plum tomatoes, 1 cucumber, 4 ciabatta rolls, 4 large pickled gherkins
Grind a kilo of beef in your meat mincer. Then grind up the red chilli in a pestle and mortar, and mix it in a bowl with the onion, tarragon, egg, breadcrumbs, mustard, Parmesan, nutmeg and beef. Shape into four generous patties and refrigerate for half an hour. This gives your home made burgers a chance to firm up slightly.
When you're ready to cook your burgers, get a frying or griddle pan nice and hot. Brush the pan with a little oil, season the burgers generously with salt and pepper, and cook for 10 minutes, turning them carefully every minute or so, until they're nice and juicy, or longer if you like them well done. Make sure they don't break up when you turn them.
Meanwhile, roughly chop the tomato, cucumber and lettuce, mix together and set to one side. Once the burgers are cooked, cut the rolls in two and toast them quickly on the griddle or in a toaster. Sandwich the cooked 'Elvis' burger between the toasted rolls and serve them on individual plates with the gherkins and some of the chopped salad (add a little extra virgin olive oil or dressing if you like) on the side.

Ingredients: Minced lamb, finely diced onion, garlic ground cumin, coriander, mint and seasoning.
The Kofta Kebab is the star of this dish. Mince your lamb with the other ingredients above in proportion according to your taste. Mix the ingredients together with a little beaten and leave to chill in the fridge.
When the mix is cold you can shape it around a pre soaked wooden skewer. The skewers are soaked in a little water to stop them burning when the kebabs are cooked.
The dip is very simple, in a bowl mix a little fresh natural yoghurt with some finely chopped mint, a dash of mint sauce, salt and pepper and lemon juice to taste. You can also add a little paprika top spice it up a little.
This dish is served with roasted vegetables. Stir-fry thin strips of your favourite vegetable in a pan with a little Chili oil and seasoning. Serve with some mixed lettuce leaves and either some Pitta Bread or flavoured tortillas.
This is a fresh and healthy dish for a great summer lunch. The kebabs taste even better if cooked on a barbeque.
